To Pickle Walnuts
Take 100 Walnuts about the middle of summer when a pin will go through them, put as much water as you think will cover them, with salt enough to bear an egg - boil it and let it stand till cold then pour it on the nuts tie them close let no air come to them they must lie two weeks in the pickle - shifting it twice then take them out and put them in vinegar for a month, shift them twice then take a gallon of the best vinegar, add pepper & cloves of each an ounce mace and nutmegs of each half an ounce - ginger two ounces

Apple Pie---
Take the apples, and stew them, season with sugar if required, rosewater and spice, roll out the rich paste and put it in to bake lie some bread in the bottom to keep it from rising, when nearly done take it out, take out the bread, put in the apple, cover the top with paste, let it stand in the oven again till the bottom appears to be done, when taken out, cover the top with sifted sugar
