Bean Cheese Chili Burrittos
Quick & simple to assemble. Make ahead & store in frig or freeze. Reheat as needed.
10 - 8 " flour tortillas 1 - can (16 oz) refried beans 1 - can (4oz) diced green chilies 10 slices Muenster cheese.
Wrap tortillas in foil - heat in preheated 375 ° oven. 15 mins. or until warm & pliable., but not dry. Remove 1 at a time: Place 2 T beans - 1 tea chillies & cheese across each tortilla slightly below middle. Fold up bottom to cover filling. Fold sides toward center. (roll up from bottom.) Wrap each in foil - refrigerate or freeze.
Bake on cookie sheet :- 375 ° - 15 min or until hot. 20 mins if chilled 30 mins if frozen For variety omit tortilla & put on 5 split hamburger onion - over

Place each on foil square - crumble foil around bun but not over bun.
Broil 6" from heat - 5 mins or until cheese is bubbly & slightly browned -

Fords Mexican Meat Pies 250 ° - 1 1/2 hrs.
1 1/2 lbs. gr. beef (not too lean) 1 chopped onion - 1/2 c. chopped celery 1 can stewed tomatoes 1 can chili salsa salt & pepper to taste
Flour tortilla - 1 can whole green chilies - 1 can red chilies 1/4 tea chili powder Dash of cumin grated cheese
Brown meat - onions - celery add to above: chili salsa - stewed tomatoes - cumin - salt - pepper - chili powder - may need to add some meat juice to make it juicier. Simmer 1 hr.
Prepare for oven - Grease casserole Layer meat - strips of chilies cheese - top with tortilla - repeat 2-3 layers are best. (over)

Bake 1 1/2 hrs. at 250 ° -
Remove when cheese is melted & chilies are cooked.
Before placing in oven you may wish to put eggs on top for baking. Fancy it up on top with chili strips. If red chilies aren't available use more green chilies.
If you want to stretch use more celery & onion.
