Receipt to Pickle Cucumbers

Cut your Cucumbers half an inch thick strew a handful of Salt upon them let them stand 6 hours drain and dry them with a cloth, put them in a Jar with Black pepper all spice ginger mustard seed, whole onions and one head of garlic if not dislik'd. boil as much of the vinegar as will cover them. It must be pour'd on boiling hot cover them with a cloth 3 Days. Bottle the Liquor again and let it stand till cold before you put it in the Jar. One Week after repeat the Same a bladder over them they will be fit for use in one month and I have had them good for 3 years.

To make Nector

2 Gallons of water 1 pound of berry sugar 1 pound and half of Raison 2 lemons Sliced and the rind of one grated to lay three days & to be strained thro a Jelly Bag bottle it and in a fortnight it will be fit for use

2 Penny worth of Saffern dry'd and beat fine 1 do of Turmerick in powder 1 oz of Champone powder 1 Nutmeg 1 1/2 oz of Anvil dust beat & syfted fine ______ Mix all well together in a lb of Treacle with a tea cup full of Penny Royal Water. Take a desert Spoonful one hour before Breakfast and another 1/2 hours [crossed out: before] after dinner stiring it up every time.

To Make Dutch Wafers

2 ounces of Butter melted in a pint of milk when ____________________

To make the Dutchess of Norfolk Punch

Take 20 Quarts of Brandy and put into it the peel of 30 Seville Oranges & 30 Lemons pared very thin let them infuse 12 hours then have ready boil'd & cold again 30 Quarts of water then put in 15 Pounds of double refined Sugar mix the water and the Brandy together adding the juice of 30 Oranges and 24 Lemons strain it from the Peel and barrel it up put in a Quart of new milk from the Cow then stop it up close and let it stand a month or six weeks then bottle it and it will keep many years.

2 Drachms of salt of wormwood to a pink of milk water the juice of 3 lemons take a cup full Night and Morning.

To preserve Oranges

you must scoop off the [fruits] with a silver spoon & let them lay in salt & water for two or three days then boil them in a quantity of spring water till tender take them out and let them lie on a hair sieve to drain when dry put them in a milk warm syrup let them lie half an hour just scald then put then in a deep dish & cover it let them stand two or three days & then boil them till they look [clear] but you must must mind not to let them be in so long as to break if you think they do not look
