Chocolate Custard Ice Cream - [[Sears]]

1 egg separated 1 tsp. vanilla
1 cup milk few grains salt
¼ cup sugar ½ cup whipping cream
2 sq. chocolate 1 tbsp. sugar
Melt the choc. Combine with the melted choc., the sugar, the egg yolk & milk. Cook until the mixture is thickened or coats a silver spoon. Chill. Make a meringue by adding 1 tbsp. sugar & the beaten egg white. Add the vanilla & salt to the meringue Fold the whipped cream into the meringue & combine with the custard. Freeze.

Bisque Tortoni - Sears

2 eggs ½ cup crumbled macaroons
⅓ cup sugar 1 tsp. vanilla
½ cup milk 1 cup whipping cream
1/16 tsp. salt
Make a soft custard by combining the eggs, sugar, salt & milk & cooking until the mixture coats a silver spoon. Chill. Fold in macaroons & whipped cream to which vanilla has been added. Freeze.

Refrigerator Rolls - [[Sears]]

1 cup milk 1 cake compressed yeast
¼ cup sugar 1 egg
½ tbsp. salt ⅓ cup fat.
3 cups flour
Melt fat into ½ of milk. Add sugar & salt. Add remaining milk & cool until lukewarm. Add yeast & beaten egg stir well. Work in flour & let rise to double bulk. Knead lightly. Place in bowl & store in refrigerator. When ready for use the dough maybe kneaded, shapped & allowed double in bulk before baking. Bake in a hot oven 425 °F.

Refrigerator Cookies - [[Sears]]

6 tbsp. fat 1 egg
1 ½ tsp. milk 1 tsp. B. Powder
¾ cup sugar ½ tsp. vanilla
¼ tsp. salt 1 ½ cups flour
Cream fat & sugar. Add egg and milk & beat the mixture well. Sift & measure flour & add B. P. & salt. Sift dry ingredients together twice. Add the creamed mixture blending thoroughly. Add vanilla. The dough maybe wrapped in oiled paper & stored in refrigerator. Cookies maybe sliced or shaped in pastry tube & baked at 400 °F as needed.

Cherry Sherbet 1 qt. Royal Ann cherries pitted or 2 no. 2 cans ⅔ cup sugar 1 tsp. plain gelatine soaked in 2 tbsp. water ⅓ cup orange juice ⅓ cup lemon juice 1 egg white Few drops almond extract Red coloring Drain juice from the canned cherries & add water to make 2 cups. Add sugar to 1 cup of this liquid & bring to a boil. Dissolve soaked gelatine in this. Combine with the other fruit juices. Add a few drops of coloring & cool. Freeze until partially frozen then add unbeaten egg white. Beat with a rotary beater. Stir in flavoring & drained cherries, chopped rather finely. Freeze until firm. [[Sunset]] Feb. 1940.

Prefer home-canned cherries.

Spiced Figs - [[Sunset]] Feb. [19]40. 3 cups dried black figs 2 cups water 1 ½ cups vinegar 3 cups brown sugar 3 - 3 inch sticks of cinnamon Whole cloves Rinse the figs off & stick 2 whole cloves into each. Combine remaining ingredients & bring to a boil. Add figs & simmer until the fruit is tender & the syrup is slightly thickened. Cool the figs in the syrup. To serve, drain & remove the cloves.
