Ham Croquettes - [[Sears]]

3 tbsp. butter 1 cup milk
4 tbsp. flour 2 cups ham ^cooked chopped
½ tsp. salt 1 egg beaten
⅛ tsp. pepper 2 cup cracker crumb
Melt butter, mix with flour and seasonings, add milk & cook until the mixture thickens. Stir in the cooked ham, which has been chopped. Cool & shape. Roll in crumbs, next in beaten egg & last in crumbs. Fry in deep fat until brown.

Stuffed Green Peppers - Sears

6 green peppers ½ tsp. salt
2 cups dried, cooked meat ⅛ tsp. pepper
½ cup bread crumbs 1 onion, minced
½ cup meat stock Buttered crumbs
Prepare peppers by washing, cutting a piece from 1 end to remove seeds & parboil for 5 min. Combine remaining ingredients for the stuffing. Fill the peppers & sprinkle with buttered bread crumbs. Bake in baking dish 40 min. in moderate oven 350° F.

Jelly Roll (Refrigerator Cake)

Jelly roll 1 tbsp. gelatin
Peach preserves 2 tbsp. cold water
Peach pulp, 1 cup 1 cup whipping cream
Dissolve gelatine in cold water and add peach pulp. Combine with whipped cream. Spread jelly roll with peach preserves. Pour half of fruit & whipped cream mixture into deep mold, add jelly roll, then the remaining fruit & cream. Chill. Slice & serve with whipped cream. This jelly roll may be sliced before being plated in the fruit cream mixture. - [[Sears]]

Cherry Cake (Refrigerator Cake)

½ cup cherry preserves ½ cup butter
1 tbsp. gelatine 1 cup powdered sugar
2 tbsp. cold water 3 eggs, seperated
1 cup whipping cream 1 ½ dz. choc. wafers
Hydrate the gelatine in cold water, then dissolve over hot water. Cream the butter with ¾ of the sugar until fluffy, add the well beaten egg yolks & beat the entire mixture until it is all fluffy. Add the gelatine & preserves combine well. Beat the egg whites until stiff, add remaining ¼ of the sugar. Fold into fruit mixture. Fold in ½ of the whipped cream. Line a mold with chocolate wafers. Pour mixture into mold. cover with wafers & let stand in refrigerator at least 24 hours. In serving garnish with the remaining whipped cream. - [[Sears]]

Lemon Chiffon Pie

1 tbsp. gelatine ½ tsp. salt
¼ cup cold water ¾ cup lemon juice
4 eggs, separated 1 tsp. lemon rind
1 cup sugar
Prepare a cooked custard of the egg yolks, half of the sugar, salt lemon juice & rind. Add the hydrated gelatine & cool. Make a meringue of the stiffly beaten egg whites & the remaining half of the sugar. Carefully fold the meringue into the custard mixture & pour into a baked pie shell. Chill.

Red and Gold Whip Dessert

1 pkg. gelatine 1 cup strawberries
2 cups pineapple juice
2 tbsp. sugar 1 ¾ cups whipped cream
Prepare gelatine using pineapple juice. Whip, add sugar and strawberries. Fold in whipped cream. Place in mold & chill.

Prune Whip - [[Sears]] 1 ½ cups cooked prunes 2 slices pineapple 1 ½ cup combined prune & pineapple juice juic ½ tbsp. gelatine 9 marshmallows ½ cup whipping cream ½ tsp vanilla Pit prunes & cut in pieces. Cut pineapple into small juices. Soften gelatine in ¼ cup fruit juice, heat remaining juice to boiling & dissolve softened gelatine in it. Cut marshmallows into pieces. Whip cream & add vanilla. When gelatine begins to set, combine fruit & marshmallows with whipped cream. Chill.
