14 The best way to make Conserue
of Red roses

Take 3 pintes of runing water to halfe a pinte of roses & . 2 pounds
of suger the boile the water and let it coole againe, then put
in your roses unbeaten but the white cut away as you pull them
from the budd before you use them, soe let them boile till you
perceiue the leaues to be tender and come to there colour, then put
in your sugar and boile them up, and soe pot them for your use

Take Roses before they be too much blowne and cut off the whites of them
and to euery ounce of roses, put . 2 . ounces of sugar and soe beate
them together in a morter till they be uery small, then put them
in a glasse, closely couering them, and set them in the sunne when
it is uery hot 4 or 5 dayes

Take an earthen pott and put your barberies in it and let them stewe
ouer the fire, the pott being closely sopt, then straine them out, puting
to euery pound thereof a pound of sugar and mingel well alltogether
and let it boile till it be thick

Take your Barberies well growne and stone them laying a rowe of
Barberies, cast sugar on them and then a row of Barberies and sugar
againe, to pott them up in your gelly potts for the whole yeares use

put in your barberies and they will keepe good

Take your flowers and their weight in sugar boile your sugar to a Candy
height, then put in the flowers as it boileth, then dry them in the
dish and keepe them to your use
