(21 Chickens forc'd with Oysters

Take Oyster, parsely, Onions, butter, pepper Salt grated Bread Mushrooms if you can get {them} & as many eggs as you think proper fill them inside & Cut {them} on the breast If you have a mind to & put Some of the Stuffing there, make Gravy of Oysters, butter & mace, pepper, roast them well

Pickle Mushrooms

Lay {them} in water & salt & rub {them} {with} a [Hannell?] very white {then} put on a Sauce pan of water & Salt & when it boils up, put in your Mushrooms; & boil them two Minutes then take {them} out; & lay {them} in a Cloth to drain, and make your pickle thus To a Gallon of white wine Vinegar take one Quart of white Wine, two rases of Ginger two Nutmeggs cut in Slices four Blades of Mace two Spoonfull of Salt, boil this up & skin it will take it off from the fire & when Cold put in {your} Mushroom then Cover them with a [Bladd?]

To Pickles 100 Walnuts

Run a {knitting} needle {through} both ways & put {them} in a boiling hot brine nine days, Shifted every, {then} boil {them} in three water, & put {them} into {Tart?] {with} /2 oz of Cloves & Mace & as much pepper & Ginger four Spoon fulls of mustard 4 oz Shallotes some have reddish [Serap'd?] & as much Vinegar 6 [oil?] as will Cover them

36 To make Bath-Cream-Cheese

To two Gallons of Milk add two Quarts of Cream -- Take care not to run it too hot - when you do run it put a Quart of Cold Water & don't make you Curd too hard before you put it into your Fatt - after being put into the Press take it out in about half an Hour and wash your Cloths & put it in again, and in about two Hours take it out and Salt it - if you make your Cheese at Night take it out in the Morning - if made in the Morning take it out of the Press before you go to Bed - after coming from the Press it must be Scraped every Day.

For Consumptive Complaints in the Breast

An Officer who had a consumptive Compaint in his Breast was dissolving over a Chaffing Dish of Fire, in a very close Room, an equal Quantity of white Pitch & yellow Bees-Wax, with an Intention of soldering some Bottles, & after having breathed for some time in the Vapour arising from it, he found the Complaint in his Breast greatly relieved - This observation, extremely interesting to himself, determined him to continue the same Fumigation some days. He soon perceived a very considerable Amen amount and at length was entirely cured --- The Cure was very much talked of, Madame la Margrave de Bade was informed of it, & she was desirous that a Trial might be made of this Remedy in [Lourlacks?]' Hospital, upon a Solution whose Life was despair'd of - The Success equalled every Hope that could
