4 lbs sugar
1/4 lbs ginger root
cut in small pieces
3 lemons

[Ripe?] pears remove
stems, quarter and core,
slice in thin slices.
Add the sugar + ginger
let them stand overnight
closely covered.
In morning add lemons
thinly cut + cook very
slowly for two hours.
