Lemon pie with frosting
Grated rind & juice of 2 lemons
2 cups sugar 3 eggs
A piece of butter as large as an egg
2 table spoonsful of corn starch -
Have ready 2 cups of boiling water in a
saucepan & stir into it the corn starch
(which as been rubbed smooth in cold
water) until it looks clear - Pour into
a dish & add the sugar & butter,
When nearly cool add the yolks of the
three eggs & one of the whites, beaten
together, the lemons - bake in two
deep pie plates of medium size lined
with a delicate crust,
Beat up the whites with two spoons
ful of sugar stiff - spread this on
the pies after they are baked -
brown a few minutes in the oven
