Scalloped Oysters
Butter an oval dish put in a layer
of oysters & dredge in a little Salt
pepper & butter. then a layer of rolled
cracker. Pour over this a few spoonful
of milk enough to moisten the cracker
then a layer of oysters with butter &
pepper & so on until the dish is
full before putting into the oven pour
a little more milk over the top. bake

Pressed Chicken
Boil the chicken until it can be easily
boned & until only about a teacupful
of liquid remains, taking care to remove
all the oil, if it has to be cold to do so.
Chop the chicken (finely in a tray) then add
finely rolled cracker crumbs from 4 to 6 crackers
according to [size?] of chicken. salt. pepper &
then add the [liquid?] mixing well - then Press
