To make Shrub 5.

Take 2 quarts of Brandy, the juice of 5 lemons, the peels of 2 lemons, & half a nutmeg; put them into a stone bottle & let them stand 3 days; then add 3 pints of white wine, & 1/2 pound of sugar._______________________ Mix all together & strain it twice thro' a flannel bag, & bottle it up for use.

6. Blammange

One pint milk, half a pint cream, an ounce islinglass, the rind of a lemon, let it boil on a slow fire till the isinglass is dissolved, then strain it thro' a thin cloth, & sweeten it to your taste. When it is quite cold add to it the juice of a lemon, & a glass of white wine. Stir it in by degrees, wet your moulds, & pour it in.
