Spiced Peaches

9 lbs of peaches
1 qt of vinegar. 6 lbs of sugar
2 oz cinnamon whole
2 oz cloves " in a bag.

Place vinegar sugar and spices
to boil, when boiling add the
peaches about 2 lbs at a time to
just boil through, and so on until
all are done, then pour the boiling
syrup over all let stand 3 days
boil the syrup (but not the
peaches) for 5 minutes and pour
over the peaches, and again in
3 days, when cold fill the jars
cover tight
