Pound Cake.

Take 1# of butter, and 1# of sugar, beat them to a froth, save the white of 1 for Iceing a wine glass of wine, brandy and rose water, a tea spoonfull of cinamon & nutmeg poun -ded fine, 1 pound of sifted flour, add the flour and eggs by degrees beating it all the time, bake it in a slow oven 3 hours when iced put it away, to dry

Queen Cake

is made in the same manner; adding to this quantity a quarter of a pound of dry currants, picked washed & well dry

Buns

A pound and quarter of flour sifted, half a pound of butter rubb. fine in it, a wine glass not quite full of yeast, a wine glass of wine brandy and rosewater, mixed, a little spice and a small handfull of currants, 3 eggs beat very light, wet it with a pint of milk beating it all the while with a knife, then set them to rise for 2 hours, then add half a pound of sugar, make them up with a quarter # of flour. Set them in pans to rise an hour and half longer if required - bake them in a slow oven 10 minutes will bake them

Jumbles

Take 1# of Flour, butter & Sifted sugar, cut your butter fine with a knife, if you find this does not do, rub it fine with your hands, beat 3 or 4 eggs very light, half a glass of rosewater 2 teaspoons full of spices, l6 drops of the essence of lemon, mix all well with a knife put it on your table knead it with a little flour roll out cakes, and bake them in a slow oven

14 ounces of flour half a pound of butter, and sugar butter rubbd fine, half a teaspoon of cinamon & nutmeg, 18 Drops of the essence of lemon a quarter of a glass of rosewater fill it with pure water, a half a glass more will wet it 1/2 and eggs mix all well together put it on your table and knead it well cut them round and bake them in a slow oven

Stewing Cranberries

Take a pound of sugar and 1/2 pint of water put them on to boil, as the skim rises take it off, or strain the liquor. then add 1 quart of cranberries let it boil over a slow fire about, 10 minutes or till they appear to be done stirring them gently.

Custard Pudding

4 eggs beat, very light 1/4 lb of sifted sugar, add this in by degrees, 1/2 glass rose water, teaspoonfull of spice and a pint of milk it will make 3 puddings.
