Rice Pudding
3 Cups milk
1/2 cup sugar
1/2 cup raw rice
1/2 tsp. salt
1 tsp vanilla

Wash rice in cold water and
drain. Put rice in top of double
boiler - pour in 1 cup boiling
water. Cook over boiling water
1/2 hour with lid on. Let
3 cups milk get hot. Pour over
rice, add 1/2 c sugar and stir.
Bake 1/2 hour 350 degrees or until a
light crust has formed. Take
from oven and stir in a
large teaspoonful vanilla.
Put back in oven until a
brown crust forms again.
