To Preserve Cherrys

Take a pound of Cherrys, stone them to a pound of
sugar then take 15 or 20 Cherrys pull thye red skins
from them boyle those skinns in a pint of fare
water & when they are well boyled straine thye
water from them & of it make your surope adding
your sugar boyle it & when you have
scumed it then put in your Cherrys lett your
surope coole a littel for fear it srivel
your Cherrys & lett them boyle very fast to thye
brime of the Skilet that you may scome it better
put them into your glasses warme keeping only
3 or 4 spoonfulls of your Syrupe tell it be
coole to cover them
