To Bottle Gooseberries
Take your goosberries before they are full grown
top & tail them, & then put them into common
quarts bottels with the largest mouth, Shake
them down well with. When filld cork them down
close & dip them in Melted resin then type
Peices of Wet Bladder over the Corks after this
put you Bottels into a large kittel with some
hay to keep from from breaking them fill the
kettel with Water & place it on the fire till
scalding hot then take it out from the fire &
Let the Bottels Continue in the kettel till the
water is Milk warm then take them out &
keep them in a dry place which is cold.
If you strictly observe this recept they will
be as good for 2 years as if immediately taken
from the Tree

A Comon Plump Cake
1 lb of Butter rub'd into 2 lb of Flour 1/2 a pint
of ale yest 3 Spoonsfulls of [Lisbon ?] some
Cloves Mace & Nutmeg 3 Eggs & a Little Salt
warm as much mulk as you think will wet it
Mix it all togeather & set it to the Fire to rise
have ready a 1b of Currants made very clean
& 3/4 of a lb of Sugar & when the Cake is ris
Mix it all Together
