9 Scalloped Oysters Butter an oval dish put in a layer of oysters & dredge in a little Salt pepper & butter. then a layer of rolled cracker. Pour over this a few spoonful of milk enough to moisten the cracker then a layer of oysters with butter & pepper & so on until the dish is full before putting into the oven pour a little more milk over the top. bake

Pressed Chicken Boil the chicken until it can be easily boned & until only about a teacupful of liquid remains, taking care to remove all the oil, if it has to be cold to do so. 10 Cream of Tartar biscuit Work into a quart of sifted flour a table spoonfull of cold lard or butter - Sift in one teaspoonful of soda - two of cream tartar, Wet with new or sweet milk. Roll thin with as little kneading as possible. 11 Parker house rolls 2 quarts of Flour. 1 pint scalded milk 2 tables spoonsful sugar . Yeast. Another One quart of cold boiled milk, 2 quarts flour one spoonful lard or butter rubbed into the flour make a hole in the middle of the flour take one cup of yeast 1/2 cup of sugar- add to the milk & pour into the flour butter salt let it stand till morning then knead it hard & let it rise, when it rises out & stir it down nead again & form in afternoon. cut out ready to bake & let it rise again. Bake twenty minutes

Graham rolls 1 egg 1 teaspoon shortening 2 cups sour milk little [?] 1 teaspoon soda a little wheat flour, Graham [enough?] for thick batter

Graham bread 1 quart warm water 1 cup [?] 1 cup yeast 1 teaspoon soda stick enough to cleave from the dish

12 Frosting [For] one egg & large spoonfuls of sugar & one even teaspoonful of cream tartar

Light brown sugar beaten with the whites of egg make nice - frosting The whites & sugar put together & stirred make nice smooth frosting.

Frosting without egg. 1 cup sugar granulated or fine white. 5 Table spoons of milk boil 4 or 5 minutes. stir until cold - put on cold cake

Coffee Custard 1 Quart strong coffee 1 pint of milk boil together 6 eggs beaten with 1 and 1/2 cup sugar - cool in cups Cornstarch in small quantity adds to [frosting]

13 Cake Sponge Cake 6 eggs separate yolks from the whites beat well add to the yolks 2 Tumblers of sugar. Two Flour half a glass of lemon juice. sugar sprinkled over top bake.

sponge cake 3 eggs - 1 cup of Sugar Table spoonful of Butter. 1 cup flour. Not quite ½ teaspoon soda disolved in a Table spoonful of new milk Flavor with lemon.

Sponge drops Beat to a froth 3 eggs & 1 teacup of sugar, stir into this one heaping coffee cup of flour in which 1 teaspoonful of cream of tartar & half teaspoonful of soda are throughly mixed Flavor lemon Butter tins with washed butter, drop in tin spoonful 3 inches apart. Bake in a quick oven watch closely. serve with ice cream.
