4 Shank of Beef A shank of 12 lbs. sawed in pieces - put in cold water Skim when boiling - when the fat rises [drip?] off with spoon. Cook, 6 or 7 hours - take out & remove the meat from bones - chop the meat not [?] - strain the broth salt cayene pepper & black put the meat back into the broth cook slowly until thick. Pour into dishes or [?} to cool it will [?] out in [?] which is nice to eat cold or [seasoned?] & fried in egg & cracker crumbs. 5 Spiced Beef From 6-8 lbs of the round as thick a piece as you can Rub with salt tea cupful salt. tablespoonful of cloves 1 spoonful cinnamon 1/2 spoonful mace Stick 2 or 3 dozen cloves into the meat after the salt & spices is well rubbed in and put it in a bowl covered with a cloth as you "would meat to [oven?]" On the third day drain the meat & put in a kettle with just enough boiling water to cover. cook slowly 'till very tender from 3 to 5 hours. Add no more water than is necessary turn the meat often after it grows tender. When done put between two plates with a heavy weight on top. Keep in cool place. Serve cold in thin slices. 6 Muffins 2 eggs/table spoon butter 3 cups of flour 2 teaspoons cream tartar 1and2/3 cups sweet milk 1 teaspoon soda 3 table spoons sugar. Mix Cr. T. dry in flour

Graham or Indian Muffins 1 cup sweet milk 2 cups Graham or Indian meal 1 and 1/2 cups flour - 2 great spoons molasses or sugar 1/2 teaspoon soda

Pop overs 2 eggs 1/2 cup sweet milk 1/2 cup flour heaped [Butter?] [six?] of egg. Heat [?] hot. Put in [stove?] quickly

Muffins 1 egg. 1 cup sweet milk 2 spoonsful of sugar. 1 spoonful of cream or small piece of butter. 2 teaspoonfuls of cream of tartar 1 of soda - this quantitiy fills a [gem?] pan. Bake quick!

7 Omelet Beat the yolks of 6 eggs with pepper & salt mix one table spoonful flour in 1 cup of milk & add Beat the whites to a froth and stir in. Put into a buttered spider - when cooked double the omelet one half upon the other & serve hot.

Minced beef 3 1/2 lbs lean beef (cross rib piece good) chopped fine raw. Mix with 6 soda crackers rolled fine 3 small beaten eggs - 1/2 table spoon salt & of milk 1 small nutmeg. If no fat add butter size of an egg mix well - make a loaf & bake 1 and 1/2 or 2 hours add sage

Spiced currants 5 lbs currants 2 table spoons each of cloves 6 " sugar Cinnamon & mace 1 pint vinegar Boil 2 and 1/2 hours.

8 Beef Pies Take small pieces of rump steak odds and ends or nice bits boil well then make a crust as good as you do for Soda biscuit & put over the meat & some gravey, in a dish. bake well,

Pressed Chicken The chicken should be nicely jointed & cleaned & put into the kettle with just enough water to cover it - add salt & cook slowly till done a little soda put in while boiling improves it Take out all the bones cutting the meat in nice slices - put a stout cloth into a [bowl?] then lay in the meat alternating white to dark - Cover over top with a cloth put on a weight set aside cool
