Chop Suey
½ lb lean pork cut in inch cubes
2 onions sliced in ½ in. slices
1 C. celery cut in 2 in. strips ½ in. wide
½ C. mushrooms (canned)
½ shredded green pepper
¼ C. uncooked rice
2 tsp salt
⅔ C soup stock (1 Can chicken soup or vegetble)
Brown onion in 2 tbsp drippings
Add mushrooms, celery, pepper and
pork. Cook 5 min. Add rice,
salt and stock and cook slowly
40 minutes.
