Banana Cake. ½ cup shortening ½ cup sugar 2 eggs, well beaten 1 cup chopped pecans or English Walnuts 1 cup mashed bananas 1¾ cups flour sifted with 1 tsp. baking powder 4 tablespoons cream 1 tsp. [baking] soda.

Cream shortening & sugar & add the well beaten eggs. Dissolve the soda in cream & add to previous mixture. Stir in the remaining ingredients. Bake in greased loaf or tube pan in moderate oven, 350° F. 45 min. or bake in 2 round layer cake pans for 30 to 40 min. This cake can be served plain or with caramel, chocolate or vanilla frosting. It improves upon standing, the banana flavor is more pronounced after a day or so. Garnish with pecan halves. [[American Home]], October 1938.
