To make a little Cake

Take four pounds flour, One pound & Quarter Sugar, one pound Butter, one pint milk, one pint yeast, half an oz. of Spice and 6 Eggs

Sugar Cakes

Take one pound flour, one pound Sugar 10 Eggs rosewater & Seeds

Portugal Cakes

Take flour, Butter & Sugar, a pound of Each, a Quarter pound of Currants a little Canary & Spice

Plumb Cake

Take twelve pounds flour, five pounds Butter, Five pounds Sugar Eight pounds currents, two oz Spice , [one?] pint Canary one [pint?] rose water 40 Eggs 1 pint yeast.

Glaze it with the whites of four Eggs & Sugar & rose water beat up together & Spread on when the cake is hot.
