Raisin Wine
One & half Malaga raisins, half one
hundred Smyrna Raisins without the
stalks. Twenty five gallons water.
Let this stand 21 days. Then strain
if off pressing them a little.
Barrel it & put one bottle Brandy
to every 25 gallons. Let it stand
a year before you bottle it but
if two years better. & it will keep
three or four years in the cask
before it is bottled & be the better for it.
This is an excellent substitute for foreign white wines
for the use of the kitchen & quite
sufficiently good for wince sauces
soups, &c, &c.
