Rolls

Rub one ounce of butter into 1 lb of flour. Mix
one egg well beaten, a little yeast (that is not
bitter.) and as much milk as will make the
dough of a moderate stiffness; Beat it well;
but do not knead; let it rise & bake on tins.

Rice Cake

6 oz pounded loaf sugar, 2 lb ground Rice,
Yolks of 6 Eggs, whites of 3, juice & peel of 1 lemon,
peel grated; beat 1/2 hour, juice added
When beaten.

Tea Cakes

Take a 1/4 lb of pounded sugar, 1/2 lb of
butter, 3/4 lb of flour; a little scraped Cinamon,
a scraped lemon peel: Stir all well
together; roll it out to about the thickness
of two knife-handles; cut them into any
shape; besmear them with yolk of egg,
& strew a few cut-up almonds & sugar upon
them; lay them on a tin, and take them off
rather quickly.
