To Preserve Pippens red coulourd

Take your best Pippens & pare them, then take a
peircer & bore a hole through them, then make Sirrup for
them, as much as will cover them, & soe let them boyle in a
broad preserving panne & put into them, a piece of Cynamon
stick & soe let them boyle close covered very leiseaurly turning
them very often, for if you turne them not very often they
will spott, & the one side will not be like the other, & let them thus
boyle till they begin to jelly then take them up & pott them, & you
may keepe them all the Yeare

To preserve Goose=berryes
Take your goosberies, & pick out the stems then take
Suger & put to your Goosberies waight for waight & put a
little faire water to them, & boyle them a quarter of an houre
till they be cleare
