Small Mead - Mrs Stead 1794
To every Gallon of Cold Water, add three pounds
of Honey, and one White of Egg, beat to a froth -
put all together Cold - then Boil it gently untill
it looks quite clean. Constantly stirring off the
Froth as it frises. Then pout it into a [jar?] -
and add the rind and juice of a Leon to
every Gallon: put in, a large table spoonfull
of good yearst, or to every Gallon, [?]
a toast with Yeast, & put it in. Let it
work in the open Vessell two or three days
or, untill it has done working. The put it in
to your Barrell & stop it up. & it will be fit
to drink in a month or five weeks. -
it is very good, if drank out of the Barrell,
and when it grows a little flat Bottle it.
if you make it at the time there are Cowslips
it is a great addition. To put half a Peck
of Cowslips to the Gallon, after the Liquor
is boiled.
N.B. if you wish your mead to keep good a longer
time - add - four or five pounds of Honey to every
Gallon of water.
