Pickles

To Pickle Large Cucumbers White
Pare 15 or 20 Cucumbers as for eating, & rub them one by one with Salt, & put them
in a Glass or Earthen Pot, with a Sliced Onion. Let them lie 12 hours, then turn
the top to the bottom, that all may Partake of the brine, & let them lie 12 hours
longer, then drain them from the brine wipe them & make a Pickle of White
Wine Vinegar, Cloves, mace & Ginger, no Salt as the brine they have lain in
will be Sufficient, only boil the Pickle half a quarter of an hour, with the spice
in it, & pour it boiling hot over the Cucumbers & stop them Close.
They eat very well sliced and in Gravy under roasted Mutton.

Lemonade
Pare 10 Oranges and [3 or 8?] Lemons as thin as
Possible put the parings into a pan with
a [?] pownd of fine Sugar beat very fine, then
Squeze yon Oranges & Lemons on it &
Stir it well together & Let it stand all
night
Eight or ten Hours, stiring it
very often, when it draws near the time
to finish it put it to Two quarts or better
of spring Water that has bin boiled & stood
to Cook, stir it well togeather & Bottel it
up, it is fit to drink Directly, it must be
Straind through a Sive or Jelly Bag
