A very rainy day. I
dressed a hen for Kate and
churned. I knit on Henrys
stockins to night.

Nannie Kate and I got supper.
Clack Hubbard was here at
supper and staid all night.
Mrs Martha Booker died
to day so we heard over
the phone.

What does it mean to "dress a hen"?

Sara Brumfield

"dress" in this context is clean the innards.
Here's a good reference.
I'm wondering if her use of the word includes plucking or not.
